粤菜(Cantonese cuisine)即广东菜,发源于岭南。它由广州菜、潮州菜、东江菜三种地方风味组成。粤菜的特点是丰富精细的选材和清淡的口味,集百家之长,用料广博,选料珍奇。此外,善于在模仿中创新,依食客喜好而烹制。虽然是起步较晚的菜系,但它影响深远。世界各国的中式菜馆,多数是以粤菜为主。在世界各地,粤菜与法国大餐齐名,因此,有不少人认为粤菜是海外中国的代表菜系。
